The Bebida Rosita from Mamasita
Posted by Paul Drury

Yes, Mamasita does a lot more than Mexican food and lines out the door. It’s true.
Since 2010 the perennially popular restaurant has been refining its tequila-only cocktail list, plucked from the dozen tequila-based libations on rotation. Their latest creation is the Bebida Rosita.
Tipping its hat to the Old World but bringing along new school Latino flavours, the Bebida Rosita combines hibiscus-infused tequila and 30yr oloroso sherry in this ‘little pink drink’.
Representing the sour family, this plucky drink packs more punch than you might think, with a generous kick of habanero bitters at the finish.
INGREDIENTS
30ml hibiscus infused tequila 30ml 30yr oloroso sherry 15ml lemon juice 15ml sugar syrup
1 egg white 2/3 thimble of habanero bitters
METHOD
Combine all except bitters in boston glass add ice and shake the jesucristo out of it!
Strain into glass, add bitters
Drink whilst velvety and cold repeat
