Cocktail of the week: ‘A Dram for Midas’

The Melbourne Food and Wine Festival is in full swing and New Gold Mountain’s very own, Callan Green, will be taking his craft to the water. His cocktail uses classical flavours and modern techniques, namely chilled water dilution and a grapefruit oleo-saccharum as a sweetener all to be balanced by dry sherry, which is a true testament in highlighting the consistency and nuances of a great whisky.

The Immersery Bar is a riverside oasis set alongside Queensbridge Square on the Yarra. Enjoy original cocktail creations celebrating the three states of water – liquid, solid and gas – crafted by boundary-pushing bartenders such as Callan. He’ll be closing down the house on Sunday 16 March from 5pm so be sure to come down to try ‘Dram for Midas’
