Brighton might be known for many things: beach houses, SUVs and Shane Warne, and now it’s home to Melbourne’s newest burger joint: Royale Brothers.
Opened just before Christmas, RB is owned by Daniel Vaughan, Guy Mainwaring and Tim Purton-Smith – who also happen to own The Pantry, conveniently located next door.
In two months Royal Brothers has already has some big names through the door. Harry Kewel took on the boys’ “Custom Built Giant Quad Burger”, while Sir Viv Richards and tennis ace Anna Ivanovic are also fans.
As co-owner, Purton-Smith explains, extensive research was done to achieve the ideal burger. It’s almost down to a science.
“A holistic approach was necessary to create sensational burgers, not just singular stand out elements. Ingredients must be precisely portioned and cooked with love,” he reckons.
The pulled pork roll, Royale style, (Pork Jerk, $12), sets the bar high. The Royale with Cheese ($12) presents itself as a deliciously oversized cheeseburger, and their in-house sauce adds the right amount of zing.
The light and crispy batter on the Crispy Fish ($12), paired with the creamy combo of tartar and Coney Island cocktail sauce ticked all the boxes. Two kinds of chips ($3.50), Salted and Spiced Seasoning, are definitely necessary.
Complete the taste of summer with a slushy ($4.50) or beer from the bar.
