Duck and Fickle Mistress at the Bishop of Ostia

For the month of July, the talented Matt Wilkinson and crew at Bishop of Ostia are dishing up a specially prepared duck cassoulet, served with duck kromskies – a sophisticated crumbed roll of smooth duck on a brussel sprout salad. This is far from what you remember about brussel sprouts and I defy you not to fall in love with it.
Matched with this dish is ‘Fickle Mistress Pinot Noir 2011 vintage’, hailing from Central Otago in New Zealand’s south island; a classic deep red pinot noir, with flavours of cherries, blackberries, cocoa and herb notes. The perfect duck companion.
Available only for July, a bottle of the Fickle Mistress and Wilkinson’s Duck Cassoulet of sorts with pressed spiced leg, brussel sprout leaves salad is $70 for two, designed to share.
