The reborn and revamped George on Collins opens it doors to the public with a modern and refined all-day bar and dining area situated in the basement of the historic Georges Building on Collins Street. Milk Bar Mag was lucky enough to attend the opening and sample some of the best food and drink The George has to offer.

Formerly The Long Room, The George has brought in some of the very best professionals across the restaurant and bar industry, including mixologist Sebastian Costello and sommelier Ainslie Lubbock, to design and curate a menu of fine food and drinks with a European influence and a ‘modern Melbourne twist’. Lubbock’s hand-picked selection of wines, both classic and new, follow the restaurant’s overarching philosophy: everything made with a sense of place and by skillful hands.

This extends to the menu, created by Head Chef Tom Brockbank, which offers an eclectic range of simple and elegant dishes across breakfast, lunch and dinner; varying between pork and chorizo sausage rolls, saltbush lamb shoulder with peas and maple bacon, and popcorn panacotta served with charred plums. The flavours across the menu are rich and satisfying as familiar dishes are reinvented with a creative spirit.

The creativity that characterises much of their dishes is also evident in the newly refurbished and redesigned basement The George calls home. Led by interior design firm Hecker Guthrie, The George is open and light despite its underground dwellings, with the centrepiece of the space being a sleek central bar approachable from all sides. The bar is surrounded by a variety of seating arrangements designed for all occasions, ranging from open tables and chairs to secluded alcoves complete with curtains for a truly private dining experience.
