It’s no secret, there’s no shame, we pride ourselves on it – Melbournians love their coffee. Whether you’re one for the simplicity of a really well done long black, or a fan of customising your cup, you can barely walk a metre in Melbourne without stumbling upon a fantastic new coffee place that boasts the best bean around.

When I was offered the opportunity to speak to the team behind 30KERR65, I was curious. I couldn’t immediately dissect the name or understand its background. Upon further investigation, I discovered a clean, well cut brand built upon the ingredients to make a perfect coffee – the name is a blend of the street address (30), the Fitzroy suburb postcode (3065) and the machine calibration settings to develop the smoothest, sharpest of textures; 30 millilitres of coffee shot with 65 degree milk. Marketing genius right there.

The business has cut through the tough hospitality industry by being supremely multi-faceted. The business has evolved since 2012 into a wholesale business site, community café and barista training facility (under the name R2C for Room to Cup). This puts 30KERR65 in a unique position, providing owners Robert and John Dimattina with the opportunity to connect with their customers on another level.

‘You’ve got your coffee, then your training, to meet the standards, supported with the consistency of the product we supply and control ourselves’ said Robert. ‘It supplies a real identification of how you got there.’ This distinctive approach gives them their real point of difference, their identity in a local community brimming with tough competition.

Behind the doors of the café site is the wholesale business, which 30KERR65 built the espresso bar on the base of. Frequent requests from local residents provided the push for a caffeine hit, so they created an extension the hospitality experience.

‘It’s a bit different, it’s a story – people love a story and are naturally receptive to something they can connect with.’

The wholesale supply sector of the business, Dimattina Coffee, is the family brand, and Robert and John pride themselves on being able to work cohesively with their competitors, supplying them something unique and accessible.

‘If you get too large you can’t stop the production processes,’ John stated. ‘But we’ve got the ability to produce the smaller batches – multiple roasts that we use for specific clients. It gives us the flexibility to work with them and customers appreciate that. We give them their own private blend, branding and label, and they take it on board with their business as their own profile’

Room2Cup has been developed as a training facility that focuses on the high quality production standards, flavour profiling, barista practice and also the surrounding community.

‘The cupping lab is special because people get to understand what they’re going to get, what the ingredients are, from the plant to the green bean during the roasting process.’

You can develop and practice simple skills through their Barista Basics course, or delve a little deeper to discover the history and origin of coffee, style the texture your milk and bean and discover more about correct storage, grind and equipment with the Introduzione al Caffe course.

Whatever your style, however your cup, now you’ll have something to really brag about when you talk about your special little spot in the Melbourne coffee scene.
