Melbourne’s dining scene is one of the most coveted in the world. We stand as the nations coffee capital, host a massive variety of household food names and boast a brilliant brunch, bar and burger scene. What you certainly can’t fault the cultural diversity of what to eat and to this mix, to which Japanese speciality brand Sake will be adding their fifth Australian venture.

Coming to Flinders Lane (considered to be prime real estate on the Melbourne foodie scene), Sake restaurant and bar will offer an award winning contemporary Japanese dining experience. Their second for our fair city and joining the big leagues of Cumulus Inc, Chin Chin, Tonka, Coda and Supernormal, Sake is set to shake things up by offering a variety of settings for the ever evolving, culinary keen Melbournian.

Dominating the laneway scene over two stories, the site will include a massive, interactive dining counter on the street level; a combination of a sushi bar and robtayaki grill, surrounded by enough seating for 50. The level itself seats over 125 customers, who can choose to dine intimately or communally, spilling onto the brilliantly lit modern outdoor terrace. Diners will have the visual delight of witnessing the stellar drinks staff at the mastery of their art, shaking, stirring and pouring a wide variety of Japanese specialities and cocktails.

The menu will present a twist on the traditional Sake fare, combining their innovative style to highlight local Victorian produce and ingredients. Presenting an abundance of seafood, spices and smashing flavours, such as slow-cooked abalone with garlic lemon soy and taro crunch, southern rock lobster sashimi with ito togarashi, hijiki and ume neri gaze and Himalayan salt-chilled seared snapper with have diners chomping at the bit before they even chomp in.

Duplicating the winning strategy of the sister restaurants whilst adding new novelties is certainly the way to cut it in this city, and Sake is certainly set to make a massive impact. Keep your keen Japanese eye out for their sixth Sake surprise, to hit the tall end of Bourke Street in May as well.

It almost sounds like the premise of a reality TV show: pile a bunch of artists in a bus for seven days, send them across Mexico and see what happens.
