Bánh mì at its best is a simple yet wholesome pleasure—feeding pretty much any craving. The recipe of pickled vegetables, Asian herbs and meat in a crisp baguette is basic, but flavour balance and consistency are key.

Enter Ba’get, Melbourne’s newest Vietnamese bánh mì establishment. With hawker food exploding on the scene, the family-run joint has its heart on authenticity and traditional flavours from home, specifically the Mekong Delta region.

“It’s about staying true to its form”, says owner, Duy Huynh. And that truth reflects in their ingredients and overall product. Their baguettes are baked fresh hourly—take note of the revolving oven and that ever familiar aroma of new bread. Bánh mì fillers such as grilled meats, pâté and charcuterie are house-made.

The menu will feature classic and modern combinations of hams, salamis, grilled lemongrass pork and chicken, tomato meatballs and tofu. But chilli-phobes be warned, there might be a sneaky one to catch you out.

On the side there will be pork puffs, Vietnamese sesame donuts and pastries. Get a hold of their traditional iced coffee, (cà phê sữa đá) it does away with the whipped cream, goes light on the milk and draws on the caffeine.

Just opened on Russell Street (with an Elizabeth St venue to follow soon), Ba’get translates its fondness and constant connection for home, through its food, open kitchen and modern interiors referencing its colonial past and streetscapes.
