So who is Mr. Wednesday? Dylan Breen, 22, is a self-managed, self built entrepreneur. I was lucky enough to gain 10 minutes of his time in-between service.  Having been working over 100 hours per week since gaining the keys on the 1st of July, he has finally got his café Mr. Wednesday in Fairfield, steady with all systems in place. Mr. Wednesday opened their doors, guns blazing in late August with the help of social media to gain support.

Mr. Wednesday is something else. Its cool vibes and amazing architecture invites you to enjoy their delicious menu. Asking Dylan what his favourite was; the breakfast burger, I opted for that delightful buttery brioche.

Dylan gives his chef the freedom to play with his favourite flavours and see what she comes up with. This is the main basis on how the menu was built. They work as a team to create new dishes and compose new tastes.

After putting his carpentry skills to use by helping out a café in Palmers Green, London, to build their second premises, he landed on the dream to build his own. Dylan being the businessman he has become today started early in his life. He started his apprenticeship at 16 and had the urge at a young age to save and invest for something big. Dylan was given advice from his parents as he left school at 16 to “invest [his] money wisely”; buying an apartment promptly proved their advice worthy. Having done this with the support of family and friends, but modestly funded out of his own pocket, Dylan is creating a new name for Generation Y!

Dylan’s knack for carpentry gave him the ability to build and design the whole of Mr. Wednesday on his own. Dylan self manages the whole place also and told me the “free food is pretty good”. His favourite part of café vibes is the fact that you can compare. Its “good to get out there and see what everyone else is doing and what you can do better yourself.”

Making pizzas at night during his apprenticeship also helped fund his dream of Mr. Wednesday and his love and passion for food.  The name for Mr. Wednesday comes from his pizza shop boss where Dylan would always come into conversation with him in the middle of something and he would respond with “Mr. Wednesday in the middle of the week.” The name was catchy and it stuck!

Dylan says he has “always needed to do something” and that he “can’t sit still.” One of his favourite things is to “overcome challenges.” This has been a learning curve for Dylan. He says he has learnt a lot of “what not to dos” for his next project, which could potentially be a bar with the help of his 26-year-old sister.

Luckily for Dylan he still has the chance to be a 22 year old after all his hard work has since paid off. He has the help of his girlfriend and can still go away and “go for a beer”.
